If you haven't planned dinner for Halloween night, here's a quick and easy solution. Make a quick chili with hamburger, kidney beans and tomato sauce or our easy black bean soup. Top with sour cream, in the shape of a ghost, and garnish with cheddar cheese, lime wedge, diced tomatoes (optional) and a few corn chips. It's a yummy and healthy meal for pre trick or treating or a Halloween party.
For black bean soup, just pur a can or two of black beans into a saucepan. Mash with a fork and add water to desired thickness. Add some spices and then heat. The kids love this soup.
