Potato Cake No Crab Krabby Patty

For all big and little kids who love the popular character Sponge Bob Squarepants, here is a recipe to please.  I'm sure we're not alone when we say we've had numerous requests for Krabby Patties.  But crab is expensive and not all kids will eat it, much less on a bun, so our Creative Food director came up with this fun twist, making a Potato Cake Patty.

This is a simple recipe to make and the kids loved it!  Served with a whole wheat bun, lettuce and tomato it is actually a healthy choice for lunch or dinner.  Here's the recipe for our take on Krabby Patties.

Ingredients:

  • 4 small potatoes (cooked and mashed without skin)
  • 1 egg
  • 2 garlic cloves (minced and sauteed in olive oil)
  • Scallions diced
  • Salt, pepper, thyme, mustard powder
  • Lemon zest
  • Bread crumbs

Mash potatoes with a masher and add all ingredients.  Form into small patties.  Cook in skillet, over medium heat, in about a tablespoon of olive oil until golden brown on both sides, approximately 2-4 minutes.
