
We are often looking for new options to serve the kids for breakfast. What a surprise when we found this wonderful recipe for protein pancakes that is a really healthy option. They are easy to make and absolutely delicious. The only tricky part was letting the pancakes cook on the grill just a bit longer than usual so that they flip nicely when the first side has browned.
Easy Protein Pancakes Recipe
- 4 eggs
- 1 cup cottage cheese
- 1 cup quick oats
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 2 tsp. sugar (optional)
Simply beat the eggs, then add the remaining ingredients. Stir well and cook on a griddle at about 375-400 degrees. Be sure to lightly wipe oil on the griddle before adding your batter to prevent sticking.
These were so yummy I could eat them every morning of the week ... really.
